Meatless Beef Broth

“Life always offers you a second chance.  It’s called tomorrow.”

OK.  So you’re wondering about my sanity.  Get in line.  How can beef broth be meatless? But I promise when you cook up a batch of this broth, which can be used as the base for many wonderful dishes, the aroma of beef broth will fill your abode.


3 T soy sauce

2 t Kitchen Bouquet

2 T nutritional yeast

1/2 cup chopped onion

1/2 t rubbed sage

1 t oil

2 cups water


Combine everything in a saucepan and simmer for 5 minutes.  That’s it!

OPTIONAL – Go nuts and add some sliced mushrooms to make this into a delicious mushroom soup.  A sprinkle of Parmesan cheese on top is delicious.

If your wondering about nutritional yeast, which is NOT the same as the yeast used to bake bread, take a few moments from your computer solitaire marathon and look it up on line.  It’s loaded with all sorts of good stuff.  Maybe that’s why they call it nutritional!
