RED CABBAGE DIVINE
“Don’t believe everything you think.”
This recipe is a toss up between one of my favorite recipes and carb count. Just by throwing 1/2 cup of golden raisins into this recipe it becomes inappropriate as a lo-carb recipe. And then there’s the pineapple juice. Good grief! I think this has to be a cheat day recipe.
But I include it here because it’s easy to make, delicious, and one of my favorite recipes for cooked red cabbage At this time of year my body craves warm food.
INGREDIENTS:
Half head red cabbage, sliced thin
6 ounces pineapple juice
1/2 t salt
1/2 cup golden raisins
tarragon vinegar
2 t Splenda or small pinch of stevia
DISTRUCTIONS:
Put the red cabbage, pineapple juice, and salt in a heavy kettle and bring to a boil. Turn down the heat, cover, and simmer for 20 minutes.
Measure out the golden raisins in a 1/2 cup measuring cup. Pour tarragon vinegar into the cup to fill in all the spaces. Add this to the red cabbage along with the sweeter of your choice. Once again, bring to a boil, cover, and simmer for another 20 minutes.

Tastes better the next day. Freezes well. Warms my heart.
