GERMAN SALAD

I love German potato salad.  That warm bacon dressing sloshing around on the potatoes makes me want to eat sausage.  But alas, I’m cutting back on potatoes.  What to do?

Ta Da!  It’s easy enough to make a substitution for potatoes.  There’s always cauliflower cooked somewhere between mushy and raw.  And then there’s one of my other favorite meals, which is a veggie mixture with dressing.

INGREDIENTS:

romaine lettuce, chopped

hard boiled egg/s

cucumber, slices quartered

grape tomatos, halved

red onion, thinly sliced

avocado

red pepper, thin strips

DRESSING:

3 to 6 slices bacon, chopped and fried crisp

small onion, diced

2 T bacon grease, slightly cooled

2 T water

2 T vinegar

sweetener to taste

1/2 t salt

1/8 t pepper

1 T mayo – optional for a slightly creamy dressing

DISTRUCTIONS:

Mix and cook on low heat all the dressing ingredients, reserving half the bacon to top the salad.  Adjust seasonings to your liking.  Pour over the veggies of your choice.  Toss.

Yes, I tend to lean toward a larger amount of bacon.

The dressing in this salad contains enough fat (fat is flavor) that you won’t get immediately hungry.  And all the good veggies will make you more beautiful than you already are.  World, are you ready!
