“Some days I amaze myself.  Other days I put the laundry into the oven.”

There is a rather traditional peanut sauce that basically contains, peanut butter, lime juice, something spicy, a dash of salt, and a bit of hot water to get the desired consistency.   So let’s see what I can do with this base for a great sauce.  Also, let’s see if this peanut sauce can snuggle up to my latest addiction, cream cheese.

Take a moment, I said to myself, out of your insignificant life (I was having one of those days) and think of what foods do not pair well with cream cheese.  You can put cream cheese into hot sauces, baked goods, and spread it on bread.  My creative gene was, obviously, on hiatus.  But I soldiered on.


1/2 cup almond butter, more or less

1/4 cup cream cheese, more or less

1t Thai curry paste, more or less, any color you prefer.  I had red on hand

Juice of one lime plus the juice of the old half lime in the fridge

Pinch of salt

hot water


Place all of the ingredients, except the hot water, into your Ninja Chopper.  Don’t tell me you haven’t purchased one yet!  Whip it good.  Add enough hot water so it’s the consistency you like.  I like mine soft but not pourable.

At this point I assembled some of my favorite veggies.  I cooked up some broccoli and cauliflower in the microwave, together in one dish.  They have to learn to get along even though they’re different colors.  I roasted some onions and carrots in the oven because I love roasted onions and carrots.  I mixed them all together.

Here are my happy veggies getting to know the almond butter sauce.  Let’s call it by it’s real name, even though you could use peanut butter and then call it peanut sauce.  Notice the pink tint caused by using red Thai Curry Paste.

Once the veggies and sauce spent some time together they started to work together and get to know each other.  Once they got to know each other they discovered that they really liked each other.  I liked them even more so I ate them for dinner.  Sort of like a Grimm’s Fairytale for vegetarians.

You can also go onto the Internet and find recipes for spicy peanut sauces that contain a half dozen more ingredients.  Sometimes they use other spicy things like Sriracha instead of Thai curry paste.  Life is filled with choices.

Another use for this sauce is on Satay, which is another name for meat served on skewers. Either chicken or beef work well for satay with the sauce served on the side.  I just made that last part up because I thought that last sentence should be a little longer.  You can also drizzle the sauce on top of the grilled meat on skewers and, as we well know, the earth will continue to spin on its axis!
