BREAKFAST

If I make you breakfast in bed a simple “thanks” is all I need.  Not all this “How did you get into my house” business.

Someone once asked me, “What do you have for breakfast?”.  I think it was in 6th grade and he added, “Stupid pills”.  The humor of twelve-year-old boys is my favorite.  (That’s sarcasm.) Hopefully, they outgrow such adolescent humor before they hit 50.  But don’t bet the farm.  (That’s not.)

But back to breakfast.  Today I read a post on Facebook that said Japanese researchers found that a breakfast of ice cream makes a person more mentally alert.  The bottom line was that ice cream is a good breakfast for children in school.  These same researchers are later coming out with a diet pill and an exorbitantly priced dental plan.  I made up that last sentence.

But back to my breakfast, which takes all the mental capacity I can muster in the morning.  It isn’t a grand amount of mental capacity so I keep breakfast simple.

INGREDIENTS:

3/4 cup coconut water

1 T chia seeds

1 T coconut oil

1 frozen banana, in chunks

1 scoop Vega chocolate protein smoothie

splash of coffee

DISTRUCTIONS:

Pour about 3/4 cup coconut water into your blender.  A VitaMix would be the best.  Add the chia seeds.  Let them soak and soften while you take your shower.

After you’re dry and dressed (thank you) turn the blender on low and add a scoop of Vega chocolate protein smoothie powder.  It also comes in vanilla.  Turn the blender to high and add the coconut oil and chunks of frozen banana.  Add enough coffee to get the consistency you like.  I just do it for the additional caffeine.  You could also add more coconut water.

About frozen banana – I peel a banana, break it into chunks, and put it into a plastic bag.  The next morning, after it’s frozen and I use it, I repeat the process using the same bag.  That way the banana gets to sit in the freezer overnight and is ready for me in the morning.

Doesn’t that look tasty.  It’s the potassium and sweetness of my breakfast drink.

About chia seeds:  Chia seeds are a great source of omega 3 along with a boatload of other healthy things.  In fact, they are considered, by some, to be one of the healthiest foods on the planet.  And they’re gluten free!

Additionally, they’re small and black so can easily get stuck between your teeth.  That’s why you want to soak them while you shower.  This softens them and they blend more easily into the other ingredients.

This is a great breakfast (my opinion) because it gives me a protein boost in the morning, it’s chocolate, it has a dash of fat, which keeps me from getting hungry, it gives me another hit of coffee, and I get to run the blender while my husband is trying to sleep in!  It’s also a great take along in the car if I’m in a hurry and can find my sippy cup.

Now when people ask me what I have for breakfast, I tell them a coffee mocha banana shake.  Life is good!
