Two recipes in three days!  I was afraid she was going to have to change the blog name to Grandma Pat Rants!  Thanks for your support.

I came across this recipe and decided that it was one of those I needed in my life in order for my life to be complete.  I used to say that about men I’d meet but I got over that phase a few decades ago.  Thank you, Jesus!


whole peeled tomatoes, 28 ounces, drained, reserve juice

1 T extra virgin olive oil

1 1/2 t red wine  or apple cider vinegar

2 cloves garlic, smashed

1 t dried oregano

1 t dried basil



Put everything into a blender and process for 30 seconds.  Pour the concoction into a 2-cup liquid measuring cup and add enough reserved juice to make 2 cups.  S&P to taste.

It’s done!  Now you have the rest of the day to play computer games!

Good on pizza or other Italian configurations.  I used mine on zucchini noodles.  That’s zucchini cut with a spiral cutter to resemble noodles.  I skipped the cheese because my kitchen remodel diet is going so well and I don’t want to screw it up, or end a sentence with a preposition. I did add some roasted tofu cut into delightful squares and broccoli on the side.

This sauce will be OK in the fridge for about a week or in the freezer for about a month.  Label and date it!   We know how that goes.  Husband’s critique of the dish?  “That was really tasty!”  Yes, he said it with an exclamation point.
