RED PEPPER CAPER DRESSING

“Friends are the bacon bits in the salad bowl of life.”

This is another happy accident, like some of my children. This tastes great and is really versatile.  Time to drop the comparisons.

INGREDIENTS:

1 T freeze dried red onions

3 T red wine vinegar

2 T olive oil

1 T capers

2 T roasted red pepper, chopped (they come in a jar)

2 or 3 olives, kalamata, garlic stuffed, or whatever is in the fridge

1 T dried parsley

1/4 t salt

sprinkle of pepper

2 or 3 drops liquid stevia

DISTRUCTIONS:

Put everything into a jar.  OK.  Mine is in a bowl.  Did end up in a jar for the processing.

When it’s in the jar, get out your magic wand and whip it.  The resulting concoction will be creamy and smooth and delicious.

I now have this stored in a lidded container, ready for use as a salad dressing.  It’s great mixed with tuna and served over greens or in a sandwich.

Because there is such a plethora of ingredients, you can name this dressing just about anything you want in order to appeal to various taste preferences.  “It’s salad dressing.  Eat it!”  Sometimes that works too!
