I came across this recipe (actually it was handed to me by someone who was probably afraid that someday they’d have to eat my cooking) and I was especially smitten with the sauce part. See if it smites you, too.
1 cup hummus
1 cup Greek yogurt
1 T balsamic vinegar
1/4 t each, S&P
4 tortillas, gluten free if you’re on that path
1 avocado, peeled and sliced
1 cup red pepper, cut into thin strips
8 slices your favorite cheese
It should be the apparent that the first 4 ingredients, mixed together, make a sauce. If it’s not apparent to you, mix together the first four ingredients, which works if you count S&P as one ingredients. Set aside for a few seconds.
FYI – My grandmother used to mix S&P together and put them into one shaker. Does that explain anything about my way of doing things? Just wondering. Always nice to have someone to blame.
Lay out the tortillas and spread them with the sauce, leaving one-inch unsauced around the outer edge. Top with the rest of the ingredients. Fold in the ends and roll tightly. Wrap in plastic wrap and refrigerate for at least 30 minutes or until ready to serve.
If you are not into tortillas under any circumstances, you could make this as a salad. Simply grate your favorite cheese, provided that you didn’t purchase it in slices, and drizzle the sauce on as a dressing. If you did purchase the cheese in slices you could always dice it. Problem solving in the kitchen is not that difficult. I think I need to paint that saying on my kitchen wall.
