“The idea is to die young … as late as possible.”

Summertime really has me leaning toward salads.  What I don’t lean toward is prep time – all the cleaning and chopping.  Thank goodness there are now containers of cleaned and sliced veggies available in most stores where I shop.  Grocers are on my side!

The other bit of magic is my Ninja chopper.  Add this to the veggies and you can put together lunch in a matter of minutes, even on a hot day that has you bereft of energy.

oil and vinegar dressing

chicken, fish, pork or beef


Mince the veggies in the Ninja chopper, or food processor of you choice.

In a lovely bowl, whip together some olive oil with apple cider vinegar.  Throw in a pinch of salt and some lovely herbs of your choice.

Toss everything together and top with leftover meat from the fridge.  If there are no leftovers you might actually have to sauté some chicken or a bit of some other protein.  Or you could simply go vegetarian for one meal.


This particular salad is topped with my favorite garnish, which is roasted beets chopped together with sauerkraut.

No, it really isn’t that difficult to eat healthy.  And if you’ve moved beyond good resolutions, you might actually get to wear a bathing suit this summer.  Hope springs eternal!
