I love cucumber sauce! I love it because it’s quick and easy. I love it because it’s a nice substitute for salad dressing. I love it because it’s great on fish. And finally, I love it because it’s a great way to get rid of all those cucumbers that a person is blessed with if they have friends who are avid gardeners!
1/4 cup sour cream
1/2 cup diced cucumber
1/4 t dried mint – open up a mint tea bag or, use 1 t fresh mint, snipped
sprinkle of black pepper
Stir all the ingredients together. Chill, you and the sauce. Serve in whatever way makes you happy.
I especially like this cucumber dish tossed with raw, chopped veggies. If I’m eating alone the above recipe is enough for just me. If I’m serving this sauce with chicken or fish I’ll often triple the recipe. Sometimes I adjust the amount of sour cream.
As you might know by now, I love choices!
