“I put bacon on my bacon.”
The other day, in a fit of fitness, I bought a container of shredded cabbage, carrots, and kale. I had all good intentions of chomping my way through raw veggies and see if I could possibly get ready for bathing suit season … 2020. It’s important to have a plan or at least an excuse.
Soon enough these healthy veggies got shoved to the back of the fridge with my good intentions. Not wanting to waste something that might benefit my waist I decided to cook them. I started with a bit of coconut oil in a large skillet. Next I added the veggies, turned down the heat, covered it, and let it cook for about 45 minutes. It was good, but not very interesting in the flavor department.
I added a bit a salt and things started to look up. Next I added a bit of apple cider vinegar and honey. Finally, I saved its life by adding cooked bacon!
For my actual meal I put the cabbage concoction in the bottom of a dish, topped it with some leftover chicken and veggies from a fajita dinner, and finished it off with some leftover borscht. This went into the microwave for about two minutes. Another dab of sour cream and everything came together.
“She will eat anything!” was a recurring phrase heard in our home when I was growing up. Now, I will eat almost anything if there’s bacon in it!
