PORK AND YAM HASH

“I eat goals for breakfast.”

Here’s a simple dish that can be prepared the night before, warmed, and served with an egg or two.  If you’re not hungry early in the morning it would also make a great lunch.  So next time you grill a bunch of pork sausage, that includes brats, set one or two aside for this dish.

One will do if you’re cooking just for yourself.  Simply remove the casing from and uncooked sausage that contains pork, and you’ve got yourself some ground pork sausage.

INGREDIENTS:

1 yam or sweet potato

1 pork sausage, freed from its casing

1 T coconut oil

cinnamon, a sprinkle

DISTRUCTIONS:

Brown the pork sausage in a skillet with the coconut oil.  While this is happening you can go on to the next step.  Just stir the pork sausage now and then so it browns evenly.

Grate the yam or cut it into chunks and subject it to a food processor.  When the sausage is browned add in the grated yam and cook for about 10 minutes until the yam gets soft.

Sprinkle in a little cinnamon and enjoy!

Love that flat leaf parsley!

I highly recommend, as mentioned previously, a few eggs on the side with this dish.  I also recommend someone cooking this for you, as well as cleaning your house and telling you that you’re wonderful at least three times a day.  Failing that, tell it to yourself. Or take it from me.  You are wonderful!
