“Happiness is enough leftovers so you don’t have to cook.”

As I was organizing my hallway food cupboard I discovered a plethora of dried fruit, some nuts, a bit of coconut, and a bag with about two cups of gluten free granola.  I knew I was on the cusp of great breakfast and/or snack food.

Throw everything into a food processor.  Process until the mixture is evenly chopped.  Store in a jar in the fridge.


You’ll notice I didn’t give amounts for the ingredients because I just kept dumping things that were on hand.  There was a whole package of dried cherries and quite a few apricots.  There were very few walnuts and cashews.  Somebody’s been snacking!

But this was only the beginning!  Now it was time to get out that Greek yogurt and the blueberries that I discovered in the fridge.  When did I buy those?  Use a pretty glass, even if you’re eating alone.

This makes a great breakfast or an afternoon snack.  The big decision, when creating this dish, was what order to layer the ingredients in the glass. That was my biggest problem today.  I am one lucky lady!

This also looks great in a champagne flute but I don’t enjoy washing skinny glasses.  No, I don’t have a dishwasher, by choice.

Full disclosure – this is so delicious that I might actually eat up all the Greek yogurt before it grows a beard.  It’s too late for me!
