CHICKEN ALFREDO

“Cooking is love made visible.”

I don’t know if the above quote applies to food out of a box or a drive-up window, so every now and then it would be a good idea to actually cook a meal.  Here’s one to impress.  Best of all, it’s easy!

INGREDIENTS:

3 medium boneless, skinless, chicken breasts, cut in half

1 T coconut oil

1 cup whipping cream

4 ounces Asiago cheese, finely shredded

1/4 cup roasted red pepper strips

fresh basil

S&P

DISTRUCTIONS:

Sprinkle the chicken with s&p.  In an oven proof skillet, brown the chicken in the hot oil about 10 minutes.  Turn the chicken about half way, at about 5 minutes, to brown evenly.

While the chicken is basking and browning, place whipping cream in a medium saucepan and beat until it thickens a bit.  This should only take a minute or two.  heat over medium heat until the cream starts to simmer.  Reduce the heat and gradually whisk in the cheese.

Pour this sauce over the chicken and garnish with a few red pepper strips.  Bake at 350 degrees for about 20 minutes.  Transfer to a serving plate if your skillet has seen better days and garnish with the basil.  A bit of parsley is also, always in order.

My choice for a veggie on the side would be something green.  You could also do a salad, which would be green, and serve carrots, which would be orange.  What a great looking plate!

But a word to the wise about building up expectations.  What, pray tell, would you do as a follow up to such a meal?  Takeout Chinese would be my choice!
