“Cabbage is best after it’s reheated seven times.”
Recently I purchased a head of cabbage. It looked like it wanted to come home with me. Additionally, I love cabbage. Not wanting to waste any of this lovely cabbage and not having a taste for slaw or cabbage soup I knew I had to get inventive.
This cabbage adventure also coincided with my husband’s five day trip to a race track with his buddies. (Is she going any place with this story?) While he was away I was determined to rid the fridge of leftovers. The plot thickens.
In the fridge was a bit of cooked rice, a quarter of a raw onion, and about a half cup of borscht. That was a no brainer. I sautéed the onion with a bit of the new cabbage. When it was moderately soft I put it into a microwave dish on top of the rice and a few chunks of butter. I topped all those layers with the borscht.
A minute or two later I garnished it with some sour cream and enjoyed a most wonderful lunch.
And I still had most of the cabbage left! On to another cabbage adventure. Stay tuned.
