IMMUNITY SOUP

“Forget the sale price.  Everything is 100% off when you don’t buy it.”

I promised you soup and then I found this soup that makes promises!  This soup promises to boast your immunity.  Then there’s this long explanation about zinc and vitamin A and selenium.  I don’t know if they have anything to do with this soup but the soup is tasty.  Good enough for me.

INGREDIENTS:

1 T olive oil

2 onions, chopped

1 1/2 pounds carrots, chopped, or buy the baby carrots

3 1/2 cups broth, veggie or chicken

1/4 to 1/2 cup OJ concentrate

1 t powdered ginger or 1 T grated fresh ginger

S&P

parsley or cilantro for garnish

DISTRUCTIONS:

Saute the onions in the oil for about 5 minutes until softened.  Add the carrots, stock and seasonings.

Cover, bring to a boil, reduce heat.  Simmer until the carrots are tender.  That will take about 25 minutes.

Add the orange juice concentrate.  Wasn’t that easy!

Cool the soup and puree.  Garnish with parsley or cilantro.

I tend to go heavy on the OJ concentrate, especially at this time of year when people, like my husband, are coming down with colds.

Yes, he’s always near a box of tissue and continues to suck on zinc tablets.  He’s a very easy-to-live-with invalid during cold and flu season.  I am blessed.  Also, I didn’t get the cold!
