TOMATO FENNEL SOUP WITH SAUSAGE

This recipe caught my eye because it starts with roasting cherry tomatoes until they burst. That image made my mouth water. Besides that, this is one easy recipe. You know I like those kinds of recipes.
INGREDIENTS:
3 1/2 cups cherry tomatoes
2 red onions, cut into wedges
2 t fennel seeds
1 T olive oil
1 to 2 cups broth, you choose
2 T cream cheese
S&P
smoked sausage, your choice, bite sized pieces
1/4 cup basil, shredded, optional
Parmesan cheese, optional
DISTRUCTIONS:
Preheat your oven to about 400 degrees. Toss the tomatoes, onions, and fennel seeds in a roasting dish with the olive oil. Season with the salt and pepper.
Roast for about 25 minutes until the tomatoes are bursting and the onions are cooked. Place these roasted goodies into a pot with the broth and cream cheese. Puree this mixture with a magic wand, aka an immersible blender stick. Add the sausage. Heat.
Ladle into bowls and top with basil and/or Parmesan cheese. Yummy.
This soup also works well with meatballs dancing around in the mix. I highly recommend dancing around!
