On August 20 and 21 I posted a gluten free flour mix along with a recipe for a gluten free pizza crust using the flour mix.  Happy dance!  Loved it!  Except.

The flour mix is now languishing in the fridge as I procrastinate using it because it takes a half dozen steps to get the flour mix to a bread-like product.  I’m into this instant gratification thing.

Then I remembered the instant-like bread that’s made from cream cheese and egg.  It’s sort of like bread, is quick and easy, and fills in nicely when a craving for bread hits.  So, I asked myself, what would happen if I added a tablespoon or so of the gluten free flour mix to the cream cheese and egg combination and fry it like a pancake?

I  was determined to find out, except I couldn’t get into my kitchen because some nice workmen were ripping out an old cabinet and replacing it with a new cabinet to match the other cabinets in the kitchen.  Rule number one when dealing with amazing workmen – Stay out of their way!

When I finally got possession of my kitchen I couldn’t have been happier.  I now have a bunch of bread-like pancakes that make delightful sandwiches.  I also have a new cabinet that matches the other cabinets.  Life is much easier since I’ve become an easily satisfied shallow person!


1 T gluten free flour blend (see Aug 20)

1 t cream cheese

1 egg

dash of salt

herbs of your choice, optional


Whip everything together.  Fry the batter in a lightly greased pan.
