BANANA BREAD

“Go Bananas!”

Yes, that’s exactly what happened today.  I had some bananas in my freezer that have been languishing there along with my good intentions.  It’s cold outside.  I decided it was a good time to bake some kind of treat for hubby’s lunch.

INGREDIENTS:

1/2 cup butter

1 cup sugar

2 eggs

3 bananas, very ripe

1/4 cup milk, I used coconut milk

1 t vanilla

2 cups flour

1 t baking soda

1/2 t salt

chocolate chips and slivered almonds, optional

DISTRUCTIONS:

Preheat oven to 350 degrees.  Prepare pan.  I don’t have large loaf pans and didn’t want to fuss with small loaf pans so I prepared a rectangular cake pan.  Lined it with parchment paper and sprayed the paper with olive oil.

Combine the butter and sugar in a mixing bowl.  Add the eggs.  Beat.  Add the milk and vanilla.  Beat.

Add the bananas.  Yes!  Beat!

I then added the flour, baking soda, and salt and beat the mixture until everything looked well blended.  Lastly, I poured in about a half cup of chocolate chips and the rest of the slivered almonds that were in the cupboard.  I think there were a bit less than 1/4 cup.

The recipe I worked off of, which used regular milk and didn’t add nuts, said to bake the loaf for about 55 minutes.  I checked the cake pan after about 30 minutes and it was finished.  I cut my creation into bar-like shapes for my husband’s lunch.
