IT’S A WRAP

“Eat your vegetables.  Don’t become one.”

I have this unproductive habit of purchasing large containers of organic greens and ignoring them.  A bowl filled with greens just isn’t my first choice when putting together a lunch.

However, I know that I could find all sorts of health reasons online to eat more, raw veggies.  How to proceed?  Think, think….

Bingo!  One of my favorite foods is a wrap.  Meat and cheese and various sauces inside a tortilla-like holder always gets my vote for a tasty lunch.  Adding a bunch of lettuce would be manageable.  My task, now, is to make sure I always have tortilla wraps in the house when the good nutrition fairy inspires me to purchase organic greens.

Full disclosure – I’m shying away from gluten.  However, there are various gluten free wraps.  Not all of them are created equal.  It took a bit of experimenting to find one that works for me.  My current wrap of choice –

I really like this particular wrap because it’s tasty, flexible, and firm enough to take a lot of filling.

My latest creation included the last of the deli chicken, shredded cheese, spicy peanut sauce, sliced jalapeños and a boatload of greens.  When using cheese I generally place that on the wrap first and nuke it for about 20 seconds.  That keeps it from escaping and taking up residence on the front of my body.

I also enjoy roasted veggies with spicy peanut sauce with organic greens.  These are all fast and easy lunches, which are also a great way to use up bits and pieces of leftovers.  The possibilities are endless, which is the way I like my possibilities.
