HONEY GINGER SALMON

“The fishing was good.  It was the catching that was bad.”

Because I love salmon, I’ve been scouting for recipes that would sate my hunger.  By Jove, I think I just stared writing a bodice ripper!  Focus, Grandma!

This recipe contains two of my favorite ingredients.  The recipe also contained a few ingredients that are not my favorites.  I took them out.  What’s left worked amazingly well.

INGREDIENTS:

1/4 cup honey

2 cloves garlic, minced

2 T reduced sodium soy sauce

1 T rice vinegar

1 T sesame oil

1 T grated ginger

1/2 t Sriracha, optional

Smattering of freshly ground black pepper

2 pounds fresh salmon

green onions, thinly sliced for garnish

DISTRUCTIONS:

Preheat oven to 375 degrees and line a baking sheet with foil.

Whisk together honey, garlic, soy sauce, rice vinegar, sesame oil, ginger, Sriracha and pepper.

Place the salmon onto the foil and fold up the sides so you can sauce the fish without mishap.  Spoon on the honey mixture.  Fold the sides in and seal the packet.

Place into oven and bake until cooked through, about 15-20 minutes.  At this point you could open the packet and broil the salmon for 2-3 minutes to give it a caramelized glow.

Place this beautiful fish onto a plate and garnish with the green onions.  Serve to wild applause!
