“Soup of the day: Coffee.”
I am now going to keep my promise to confess the outcomes of my soup endeavors. I’m also going to reveal the most helpful soup hint ever!
My beef broth (Nov 19) took a lot of additives along with a lot of veggies to get it into shape. However, I did not have to skim the soup in order to remove the detritus from the top as it simmered on the stove. The reason? I put the soup kettle outside in the cold overnight. In the morning the fat/grease had solidified on top, trapping all the unwanted crud that I didn’t skim from the top.
It’s like magic. But then, the soup lacked something. I think it was taste. So I took the large bag of carrots I’d purchased because the large bag was on sale and made carrot soup.
There was also something amiss with that soup too. I added it to my beef veggie soup. Then I whipped up a batch of borscht.
I felt I was on the cusp of success. There was one more step to get to magic and that was to make some chili. If you have 5 or 6 cups of coffee along with me you’ll be able to follow my logic.
I now have jars of “soup” that contain a small ladle of the first three soups and a large ladle of chili. It’s a chili veggie soup and it rocks! There’s a lot. Fortunately, soup freezes very nicely. Last night my husband had a bowl of mac and cheese topped with a generous ladle of mystery soup presented to him as chili. He was still alive in the morning. I hope he’s in the mood for more soup today!
