“Life is about choices.”

So is the salad below.  It is so full of choices that you could probably serve it every day for a week and get away with it.  I love recipes that give me choices!


fresh broccoli, cut into bite-sized pieces

tomatoes, halved or diced, depending on the size

sliced black olives, canned are my choice

cucumbers or zucchini, peeled and chopped

cooked pasta

bottled Italian dressing or Ranch or…




diced salami

feta cheese

red pepper



Cook and drain the pasta.  Rinse in cold water to cool it down.  Set it aside.

This is a good time to prepare all the veggies while the pasta cools.  When you have all the ingredients prepared, the regular and any optional you might enjoy, toss them with the pasta.  Pour on a bit of dressing and toss once more.  Serve.

What I like to serve with this is a cheesy rollup.  Simply place cheese of your choice, grated or sliced, on a rollup,  Place on a baking sheet.  Warm it in the oven for just a bit until the cheese begins to melt.  Remove from the oven and roll into cute little tubes.


If you’re not doing meat in the salad you could add bacon or ham to the rollup.  If you are doing meat in the salad you could also do meat in your rollups if you want.  You’re an adult allowed to make choices.  Go for it!
