“Rice is great if you’re hungry and want two thousand of something.”  Mitch Helberg

Seems I’ve been into side dishes lately.  Probably because of the holidays and I’m generally asked to bring a dish to pass.  The host/hostess generally want some food on the dish.  Side dishes are the answer.

4 cups cooked rice

2 T butter

1/2 cup shelled pistachios

1/2 cup craisins

While the rice is still warm, stir in the butter.  Stir in the pistachios and craisins.  Place into a lovely dish, preferably one from a thrift store that you’re going to leave as a hostess gift.

This dish is colorful enough to be festive and subtle enough to go with just about any main course.  It’s also so darn easy to make!

Those descriptions might also be a good way to behave during the holidays – festive yet subtle.  I’ll work on that.
