CARROT AND CELERY PATE

“If it ain’t broke …”

While trying to nudge my eating habits toward healthy, I sometimes purchase food items that are “good” for me that end up languishing in the fridge until they die of natural causes.  Two of these items are carrots and celery.

I truly enjoy these two foods in soup, but when there are leftover amounts that I tell myself would be nutritious snacks, the snacking, generally, doesn’t happen.  But I had a brilliant idea!  Aren’t they all.

INGREDIENTS:

raw carrots, sliced

raw celery, sliced

a bit of oil

1 t more or less, curry powder

Salt to taste

DISTRUCTIONS:

Place the carrots and celery into a pan and toss with a bit of oil.  Cover the pan with foil.  Roast for about an hour or until the veggies are tender.

Roasted and Ready

Transfer the veggies to a chopper, add the curry powder and salt, and whirl the veggies into a pate’.  That’s a fancy word for paste.

This resulting pate’ was truly delicious.  Because I love wraps, as a good way to eat greens, this is what became of my pate’.

Jalepenos and baby spinach topped this light tasting pate’ for a wonderful rollup to go with some soup.  Lots of veggies for a healthy lunch.  I’m going to experiment with other veggie combos.  So easy!
