VEGGIE HASH

This is another of those base recipes that can be the beginning of something amazing.  Or, it is pretty amazing as it is.

This dish is great for breakfast with a few fried eggs on top, or for any other meal with a bit of protein added.  Yes!

INGREDIENTS:

2 sweet potatoes

2 zucchinis

1/4 cup onion, diced

2 eggs

1/2 t salt

1 T curry powder

1/2 T  cinnamon

oil for frying, about 4 T

DISTRUCTIONS:

Peel the sweet potatoes.  Dice, mince or shred them, along with the zucchini. I like to cut them into chunks and then mince them with my Ninja chopper.

Combine all the ingredients except for the oil.  Heat the oil in a pan.  Cook the hash until the veggies are soft and start to get a bit crisp.  Serve with or without eggs on the top.

Lately, cinnamon has been showing up in recipes where least expected.  There’s Gypsy Soup that appeared on this blog, sometime in 2016.  Still one of my favorite soups.  And here’s cinnamon, again, in a delicious hash.

This hash, you’ll find, keeps well as a leftover.  The ingredients are simple enough that it could also be turned into a soup.  Bonus!  Nice to have such simple and delicious things on hand when winter nights are calling you to a comfy chair with a good book.  Meal time?  Keep it simple.
