KALE SALAD ALA EMILY

“Don’t stop when you’re tired, stop when you’re done.”

This is a blatant marketing post for the family, which keeps producing amazing progeny in spite of me.  My kids have always amazed me.  And now my grandkids are getting into the act. This is a delicious recipe for a kale salad and a bit about my granddaughter, Emily.

First of all, Emily is a singer songwriter who lives in Nashville.  She recently released her first song, available on Amazon.

But Em didn’t stop there.  She recently wrote and told me about her YouTube channel, Em At Home.  It’s a collection of videos that include recipes, tips about cleaning and organizing, and decorating.  I was especially smitten with a recipe that she made using fresh kale.

You see (cue the music) for a long time I’ve been trying to find a way to incorporate more kale into my eating plan because kale is so darn nutritious.  But, I couldn’t find a way to make it that made my heart sing.  Em found a way!  Thank you Em.

INGREDIENTS:

1/2 large bag of fresh kale

grapes, green or red, halved

2 avocados, cubed

juice of one lemon

4 cloves of garlic, minced

parmesan cheese

4 T olive oil

S&P

DISTRUCTIONS:

Wash and massage the kale to make it extra tender.  Add the grapes, avocados, and garlic.  Squeeze the lemon juice into the mix.  Add the olive oil and cheese, along with a bit of salt and pepper.

Mash everything together for a good long time.
