GLUTEN FREE TORTILLAS

“Do you know the Spanish word for sushi?  It’s bait.”

I must admit that my favorite food is southwestern.  I love refried beans.  They are versatile and nutritious.  And black beans mixed with rice make a complete protein.  Is that plate of Mexican food looking better and better?

And then there are the tortillas.  For those of us watching gluten intake we can gravitate to the corn tortilla.  And good news, compared to the flour tortilla, it’s a winner.  Compare.

If you eat one 10″ flour tortilla, you have consumed 173 calories and 33 grams of carbohydrate. If you consume three 6″ corn tortillas, you will have taken in 150 calories and the same amount of carbohydrate as the one 10″ flour tortilla.  Winner!

But you’re not going to sit around all day munching on corn tortillas.  Think about cutting them in strips and lining a greased baking dish.  Can your mind conjure up a southwestern veggie strata?  That would be veggies and cheese and eggs on top before it’s baked.  Going in another direction with the toppings you could create a southwestern lasagna.  Hmmm.

Then there’s the option of processing a few corn tortillas with some onion and parsley before adding this mixture to ground beef for some gluten free meatballs.  Oh, the places you’ll go!mm

Any other ideas that you’d like to share?  My caffeine has worn off.  I’m finished for now.
