At last, another recipe and enough of this endless prattle.  Love this recipe because it has one of my favorite ingredients, food.  Also, it has avocado, which I generally spell incorrectly.  Avocado is not only delicious but also contains vitamin E, which could help protect against heart disease.

The reason that last sentence is not written in a more reassuring manner – if you’re stuffing yourself with sugar laden processed foods for the rest of the day you might as well skip the avocado.  Now I’m beginning to sound like my snarky evil twin!


8 ounces flaked crab – you could also use shrimp or tuna

2 green onion, finely chopped

2 T minced red pepper

1 T Herbes de Provence***

4 T mayo

3 T plain yogurt

S&P to taste

2 ripe avocados

lemon wedges

paprika garnish, optional

You’ll need two bowls.  Medium size.  In one combine the crab meat, herbs, red pepper, and green onion.  Mix.

In the second bowl combine the mayo and yogurt.  Mix.  Add the crab mixture and mix again.  You’re almost there!

Halve the avocados and rub the surface area with one of the lemon wedges that are sitting on the side ready to use as garnish.  You did remember to remove the pit from each avocado because you’re not just a pretty face.

Fill the avocado halves with the crab mixture and, if you’d like, garnish with paprika.  Set a lemon wedge somewhere in the vicinity, and enjoy!

If you pile your serving plate with greens you can incorporate those into your diet.  Good Job!
