High on the list of potassium rich foods is the sweet potato. High on the list of sassy foods is sugar. Eating too much sugar causes symptoms known as classic metabolic syndrome. I found this on the Internet so it must be true!
Included in this syndrome is weight gain, abdominal obesity, decreased HDL and increased LDL, elevated blood sugar, elevated triglycerides, and high blood pressure.
What’s your point, Grandma Pat? My point is – why don’t we find some recipes with sweet potatoes that don’t include brown sugar or marshmallows. Read on –
2 sweet potatoes, peeled and cubed
2 T avocado or other oil
1 medium onion, chopped
1 red pepper, chopped
clove of garlic, minced or pressed
1/2 t smoked paprika
1/2 t oregano
hot sauce or favorite salsa
Preheat the oven to 365 degrees.
Line a baking sheet with parchment paper and pile on all the ingredients except the toppings. Mix with your hands making sure that everything gets nicely coated with the oil.
Bake for 30 to 40 minutes or until the potatoes are fork tender. Plate this delicious mixture and top with any or all of the toppings.
