CURRY CHILI

“Only quitters have leftovers.”

Am I serious about curry chili?  I wish I weren’t.  It was a necessary accident.

This past week my husband has been home for meals.  He is usually at work and I’m only obliged to pack a lunch for him, eating other meals by myself, scavenging and nibbling through the day.

With my glorious collection of frozen soups and sundries on hand I thought I’d have it made with feeding him this week.  However, frozen portions seemed to be always just a bit too much for two.  This resulted in dibs and dabs of this and that.  Being the fearless eater in our house I appointed myself the dibs and dabs consumer.

Today for lunch I had leftover roast beef chili mixed with curry chicken and leftover rice.    I think there was also some spaghetti squash thrown into the mix.  It’s easy enough to place small amounts of leftovers into a jar for a few days, adding other bits as they occur, until a goodly amount is available.  And then …

I even sprinkled some parsley onto the mixture for the picture.  Trust me, it tastes a lot better than it looks (thank goodness) bordering on delicious.

I encourage you to try this dibs and dabs way of cleaning out the fridge.  No, it won’t save the starving children.  You’re going to have to get a bit more creative to do that.
