Lately I did the unthinkable and bought the wrong brand of english muffins. This particular brand didn’t toast up crispy while maintaining a slightly soft center. Or something. I don’t eat muffins but my husband does. We’re back to my husband being home for two weeks and my desire to feed him delicious food. Fortunately, he’s easy to please.
And just in the nick of time, I remembered his love of fruit and cottage cheese with a side of toasted muffins. That’s where the muffins came in.
Fruit and cottage cheese was not an issue. I had some mango and pineapple and peaches and strawberries on hand. I’ve stocked up for smoothies. But, and I mean this is a big but, I had to find a way to make the wrong muffins crispy with a soft center.
I am a genius. I lightly toasted the muffins in the toaster. Then I spread some mayo on the muffins and grilled them in a pan until they were a lovely toasty color. Yes, you read right. I spread mayo on the muffins.
I know that mayo is much easier to spread on the outside of bread when making grilled cheese and it works! So why would I want to hassle with butter on the muffins, she asked.
I was waiting for my husband to ask if I’d done something different with the muffins because they tasted different. No such inquiry. Try it. Mayo instead of butter when grilling breads. Easier to make and grills to a nice toasty color. You’re welcome.
