“Keep calm and carrot on.”
I’m not too fond of carrots, unless they’re in a carrot ginger soup or whipped into a smoothie. Yes, carrots in a smoothie work.
I am fond of pickled veggies, which I purchase in many varieties. And one day, which is similar to once upon a time, I had a bag of baby carrots (a very misleading name) because I needed just a few carrots for a smoothie. Back to that again.
At the same time, while cleaning out the fridge (where is she going with this) I came upon a jar of spicy pickled something or other. It was a moment of inspiration. Why don’t I simmer up the baby carrots and then dump them into the spicy pickle juice.
And there they sit in the fridge. Actually it’s the second batch. The first batch is already part of my menu. Happily living with bits and pieces of other pickled veggies.
I do have some frozen green beans, which I don’t find thrilling. I think they’re next in line for pickling. Actually, just about any veggie would work for this, and you don’t even have to mix up some pickling brine and cross your fingers that it works.
A final note: Being the curious person that I am, I decided to check on the nutritional value of pickled veggies. One of the questions to pop up in the inquiry was, will pickles kill you. The answer was, yes, pickles will kill you. The reasoning was something along the line that almost every person who’s died has eaten pickles.
Time for more coffee.
