“Keep it spicy!”
According to something I read recently, some veggies are more nutritious if they’re lightly steamed. Bell peppers are in that category.
Another “recently” involved a shopping trip where I beheld a bin of gorgeous red bell peppers. Of course, I had to purchase two. My plan was to stuff them and bake them in the crockpot.
2 gorgeous red bell peppers
1/2 pound ground turkey
1/2 cup cooked lentils
2 T diced onion
1 egg or – 1 T ground flax seeds
Cut and clean the peppers. This could be cutting them in two along the side or removing the top and scraping out the membranes and seeds.
Mix the rest of the ingredients. Stuff the peppers. Place the peppers into the crockpot on low and cook for about 5 hours.
Other amazing ingredients could include quinoa instead of lentils. I had some cooked lentils on hand so that’s what I used. I also has some sautéed beet green stems so whipped those into the mixture too. They disappeared without a trace. It’s called SNA or Sneaky Additional Nutrition.
Add ketchup. Also feel free to add Italian or Southwestern spices to the mixture. Oh, the places you’ll go!
