Welcome to a simple green salad that is simply bursting with ideas. Just use your imagination. I chose to post a salad recipe because there’s sunshine today and I’m longing for the farmer’s market and lovely fruits and vegetables. Soon, my dear.
mixed salad greens, small handful
peaches, blanched and peeled and sliced
avocado, cut into slices or small cubes
cheese, feta or fresh mozzarella
strawberries, sliced, optional
cooked shrimp or chicken, optional
raspberry vinaigrette dressing, recipe below
Layer or toss the above ingredients, minus the dressing, using your imagination for more or less of other fantastic foods. Drizzle on the dressing or serve the dressing on the side.
RASPBERRY VINAIGRETTE DRESSING:
¾ cup olive oil
¼ cup apple cider vinegar
1 teaspoon sea salt
1 tablespoon honey
1 teaspoon dried basil
½ cup fresh or frozen red raspberries
¼ cup water
Whip all the ingredients together in a blender.
Just eating such a salad might coax the gods of spring to step lively. Looking for the first robins. Searching the ground for the first plants to poke through. Not shopping for a bathing suit. I do have my limits.
