ROMESCO SAUCE

Found another sauce recipe!  Is life good, or what!

This sauce has its origin in Catalonia where fishermen serve it on fish.  Actually, it’s probably their wives that serve it on fish but I’m too tired today to get into that sort of discussion.

INGREDIENTS:

12 ounce jar roasted red peppers

4 plum tomatoes

3/4 cup slivered almonds

1/4 cup flat leaf parsley

1 1/2 T olive oil

salt to taste, about a teaspoon

clove of garlic

juice of 1/2 lemon, or grated frozen lemon from your freezer

DISTRUCTIONS:

Blend everything until it’s as smooth as you like it.  You can leave it a bit chunky if that’s the style of sauce you enjoy.  This is a very versatile recipe.  Add or subtract ingredients to suit your taste.  However, it’s the almonds that help thicken the whole thing.  Don’t omit those!

It’s done.  I’ll have to find some other things to say.  Or simply remind you that silence is golden and if you can’t say anything nice and other things our mothers tried to teach us.  That should do it!
