MUSHROOM SALAD DRESSING

Had to have another quote from Marcus.  He’s a wise one.

So, back to the kitchen.  Here’s what happened to the remaining mushroom paste that I so cleverly created out of shiitake mushroom stems.  It’s a tasty mushroom dressing with an emphasis on sesame oil and roasted tomatoes.  Yum!

INGREDIENTS:

1/4 cup mushroom paste

1 T sesame oil

1 t soy sauce

pinch of oregano

1/4 cup sun-dried or roasted tomatoes

S&P

clove of garlic, crushed

1 T olive oil

2 to 3 T frozen lemon, grated, or lemon juice if you’re still not with the program

2 T dried basil

DISTRUCTIONS:

Puree everything, adding splashes of olive oil until you’re happy know it!

Blooming Good Dressing!

This dressing is similar to 1000 island dressing in consistency.  The sesame oil seems to be a dominant taste, so feel free to cut back on this if you’re not a fan of sesame oil.  I like it but I don’t love it, so I tend to hold back with it and add a bit more lemon.  I love a lemony tang to my dressings.  Eat what you love!
