Time for some serious sauce recipes that can bring a dash of whoopee to my foods.  This recipe for ketchup appealed to me because I love ketchup on baked sweet potato fries.  What a lovely way to get a yellow/orange veggie into my day and into my body.

INGREDIENTS:

1 clove garlic, crushed or minced

1 1/2 cups sun-dried tomatoes

1 T, more or less, jalapeno pepper rings

1/4 cup golden raisins

1 t salt

1 T rice wine vinegar

DISTRUCTIONS:

Put the garlic and tomatoes in a small bowl and cover with 3 cups of boiling water.  Let them soak for about 45 minutes.

Place the raisins in another small bowl with 1 cup of boiling water.  Let this sit for about 15 minutes.  Pour the raisins with the water, along with the jalapeño pepper rings into a blender.  Liquefy.

Drain the tomato mixture, when it’s time, reserving 1/2 cup of the liquid. Add this reserved liquid, along with the remaining ingredients to the blender, and liquefy at high speed until smooth.  This may take 3 to 4 minutes.  Worth your time and effort.

To make some yummy sweet potato fries simply peel and cut a sweet potato into pieces, fries shape or slices, toss with a bit of olive oil, salt, and/or sprinkle on your favorite herb, and bake until they’re cooked through and crispy as you like.

My favorite herbs would either be herbs de Provence or rosemary.  Find your favorite and enjoy!
