SPRING FRUIT SALAD

Although I now live in a world where fresh fruit isn’t entirely seasonal, I sometimes forget how fortunate I am to have so much abundance always available, alliteratively speaking.  And I sometimes forget how refreshing a simple fruit salad can be.  Here’s a fruit salad recipe that’s almost as simple as my mind when I’m first getting up in the morning and asking pertinent questions, such as, “What day is it?”

INGREDIENTS:

1 large apple, peeled and sliced

1 pear, sliced

2 large bananas, peeled and sliced

3 kiwi fruit, peeled and sliced

3 clementines, or navel oranges, peeled and sectioned

½ cup pomegranate seeds

DRESSING:
1 Tablespoon honey
3 Tablespoons lime juice
1 Tablespoons fresh mint, optional

DISTRUCTIONS:

In a large bowl combine the fruit.  Lightly toss.

In a small bowl whisk together honey, lime juice, and mint.  Drizzle over fruit and mix lightly.  Serve to 2 or 4 people or cut down on the ingredients if you’re making this for yourself.

Did I mention the optional strawberries, blueberries, and raspberries?  Pineapple would be good, too.  This is a time to enjoy your favorite fruits in a combination that makes your little heart go pitter pat.  Add a muffin for a grown up version of another happy meal!
