STRAWBERRY SALAD

I am so excited for the arrival of all the luscious foods that come in the spring.  OK.  I know strawberries are available year round, but there are no strawberries good as strawberries that are warmed from the sun, right out of a you-pick field.  When you find such jewels, try this recipe.  If your only option are store bought, life will still be good.

INGREDIENTS:

4 T lemon juice

2 T olive oil

1 T raw honey

leafy greens – spinach works well

sliced strawberries

unsalted, raw pistachios

DISTRUCTIONS:

Whisk together the first three ingredients.  You just made a lemony honey dressing.  You’re good!

Plate up some greens festooned with sliced strawberries and sprinkled with pistachios.  Drizzle on some of the dressing.

What would I serve with this spring delight?  Maybe a yogurt parfait  as a followup – plain yogurt layered with different fruits and a few chopped walnuts on the top.

For my husband there would be a grilled cheese.  For company this would simply be a first course with maybe a baked potato with fixings for course number two.  I’m getting hungry for spring!
