NEST SALAD

I don’t understand why people say such hurtful things like, “Do you want to go for a run?” or “Try this kale.”

I recently got interested in sprouts.  They’re supposed to be filled with awesome nutrients and they add a bit of soft crunch to a salad.  The most nutritious sprout is, supposedly, alfalfa, which is a fun word to say.

Alfalfa sprouts contain vitamins A, B, C, E, and K, along with a nice dose of calcium, magnesium, potassium, iron and zinc.  And best of all, sprouts are pretty.  There is that thing about raw veggies and food borne illness, but I like to live on the edge.

One of my recent creations was a bird nest salad.  That’s any salad with some black beans on top and a ring of sprouts surrounding the black beans.

Grandma Pat, are you kidding or simply grasping at straws!   OK.  This was not one of my most brilliant ideas, but it was a lovely centerpiece on the table.  Also, it’s possible to hide all sorts of leftovers under a ring of sprouts.  Not kidding, not grasping.

You should see this salad with a spoon of guacamole in the center.  A thing of beauty, which you will also become if you continue to eat such nutritious food!
