MEAT SQUARES

The other day I had a taste for beef. Then I found some grass fed organic ground beef on sale. We’ll be eating beef for a long time.
My first experiment creation with the beef was going to involve the spaghetti squash and some spaghetti sauce that were languishing in the fridge. Meatballs would be the obvious partner with these two. But I was too lazy to make meatballs. My amazing solution was meat squares.
INGREDIENTS:
pound of grass fed organic ground beef
leftover spaghetti squash
half of a jar of spaghetti sauce
leftover sautéed veggies
grated cheese of whatever is in the fridge
DISTRUCTIONS:
Form the beef into a single patty. Fry up the beef patty while you warm the other ingredients on the stove or in the microwave.

This is my meat patty cooked about right and partially broken into squares with the aid of a wooden spoon.
To assemble the dish I simply layered the prepared items, making sure my non-round meat creations were well hidden in the stack. Finally, I suggested to my husband that we should eat in front of the TV, with the TV on, and I would be happy to bring him his dinner. We watched racing, his favorite, where one of the things the racers have to remember is to turn left. I’m a real fan.

The dish was delicious. I actually cooked up real spaghetti noodles for my husband and used the squash in my portion. This combination of layers is also wonderful with baked potato as the base, which my husband would learn about the next day.
It’s nice to have choices and variety.
