I love how in a scary movie a person yells out, “Hello,?” As if the bad guy in the kitchen is going to be like “Yeah, I’m in the kitchen. Do you want a sandwich?”
Yes, I want a sandwich that is a finger food. So, I decide to combine my new, favorite Lo-Carb Rollup, aka pancake, with a filling. My thought was to drop a tablespoon of the rollup batter into a small cupcake tin, add a layer of meat, cheese, and veggies, and top it with another tablespoon of Lo-Carb Rollup batter. What could go wrong!
Please see Lo-Carb Wraps from two days ago. That’s the batter you’re going to need.
I used: a few pieces of bacon, fried and crumbled
2 slices of ham
one inch square of mozzarella
2 or 3 T minced yellow pepper
Yes, use whatever you have on hand.
I actually put the filling ingredients into my Ninja and made it into a mulch-like product. Don’t you just love the technical terms I use?
Next, I sprayed a muffin tin. Then I put one tablespoon of Lo-Carb Wrap batter in the bottom of each whatchamacallit. I topped this with a tablespoon of the filling and topped it off with one more tablespoon of Lo-Carb Wrap batter, just like I said I would.
This is the experiment in process. Wish me luck!
I baked this at about 375 degrees for about 10 or 15 minutes. I really can’t remember. Then I pried the little darlings out and flipped them over. They went back into the oven for another 5 minutes.
For the “photo shoot” I garnished these with some greens off a bouquet that’s on my kitchen table. I sure hope that stuff isn’t toxic!
Finally – These are going to go into my husband’s lunch as weird sandwiches. However, I think I’m going to have to think up a better name if I want him to try these. “Better Than Sex” has already been used for cakes so that’s out. I’ll need a little time with this.
