TOTALLY AWESOME PASTA SAUCE

I am so into easy lately.  I finally have an eating plan that allows me to eat close to normal meals, have a cheat day, keep my energy soaring, and still lose weight.  The trick is to find enough recipes to keep it interesting and yet eat simply so that prep doesn’t require extraordinary effort.

And then my brother sent me this recipe for pasta sauce that he thought might go well with the meatball recipe I recently posted.  Thank you, amazing brother!

This recipe is attributed to Julia Child.  Now who can argue with Julia when she directs a person to add 5 tablespoons of butter!  Love you, Julia.

INGREDIENTS:

28 ounce can of whole tomatoes

onion, peeled and cut in half

5 T butter

salt, one pinch

DISTRUCTIONS:

Place the ingredients into a pot and simmer for 45 minutes.  That would mean that you’ll have to bring the ingredients to a simmer.  Simmer uncovered, giving the ingredients a stir every now and then.

At the end of the 45 minutes remove the onion and toss it out.  The onion might be wonderful compost in your flower bed.

 

I tasted the onion.  Delicious.  Didn’t toss it.  It went into some chili.

The sauce is the result of it meeting with my immersible blender stick.  The sauce is thick and rich and delicious.  Going to be my go-to sauce to ladle over zucchini noodles or any other place I want a rich buttery sauce.
