Time for a snack recipe. Sometimes I just have to have something to nosh on or I go crazy and find myself at Buffalo Wild Wings. Maybe this recipe will help. I happen to have a zucchini in the fridge. Is that a sign? No, it’s a zucchini.
1 T olive oil
dash of salt
1/2 t black pepper
1/4 t onion powder
1/2 t smoked paprika
Preheat the oven to 450 degrees. Line two baking sheets with parchment paper.
Now here comes the tricky part. Slice the zucchini as thin as you can with a knife or, if lucky, use a mandolin.
While you’re admiring your slicing expertise and after you’ve finished bandaging your fingers, combine the oil, salt, pepper, onion powder, and paprika. Stir all this together in a bowl.
Add the zucchini slices to the bowl and toss well so that each slice is coated with the seasoned oil.
Place the zucchini slices on the prepared baking sheets and bake for about 10 minutes, watching very closely. When the zucchini starts to show some brown spots remove them from the oven.
Reduce the oven temperature to 200 degrees. Return the zucchini to the oven and cook for about 30 additional minutes or until the zucchini slices are crispy. Cool your creation.
Yes, you now have something to enjoy while others a gorging themselves on iced cream and other things that you’d rather be eating. But you soldier on, telling yourself that socially acceptable lie, “I just want to be healthy.” Really? Flaunting a size 2 body in front of your iced cream eating friends doesn’t appeal to you? Whatever.
