CHEESEBURGER CASSEROLE

“Happy people live longer.  Bacon makes me happy.  Therefore…”

My current goal is to find lo-carb recipes that my husband will like and that are easy.  Let’s make that EASY!  I think I stumbled on one that could be tweaked to make whatever size you need.  Even the most delicious meal, if served 5 days in a row, starts to lose its sparkle.  This recipe sparkles for at least three days!

INGREDIENTS:

1 pound ground beef

1 clove garlic

1/4 t onion powder or 1/2 onion minced

1/2 pound bacon, cooked and chopped

4 eggs

3 ounces tomato paste

1/2 cup heavy cream

S&P

6 ounces shredded cheese, divided into 4 and 2 ounce portions

DISTRUCTIONS:

Heat the oven to 360 degrees.  Brown the ground beef.  If using real onion add it now.

At the last minute add the onion powder, if you voted against the onion, and the garlic.  Cook for another minute.

Drain the beef and spread it in the bottom of an 8×8 square pan and stir in the bacon pieces.  Of course, if it’s 8×8, it’s square.  I’m having one of my more insightful days!

Meanwhile, in a bowl somewhere in the kitchen, whisk together the eggs, tomato paste, heavy cream, salt, and pepper.  Stir in 4 ounces of the grated cheese.  Pour this mixture over the beef and bacon combinations.

Top the whole thing with the remaining 2 ounces of cheese and bake for about 35 minutes.  Check it at 25 minutes.  The top should be golden.

Yes, you could add peppers or other veggies that the gang might enjoy.  My addition would have to be peas.  My husband is crazy for peas and our cats and his boat and his car and watching NASCAR.  Easy to please.  I am blessed.
