Love this recipe because it was the crowning glory of a rollup made with collard greens.  I happened to find a great buy on collards.  They proved to be fresh and tender and tasty.  Life is good.

On to the dressing.


1/2 cup raw cashews, soaked for about 4 hours

1/4 cup water

1/4 cup lemon juice

2 T nutritional yeast

1 T dijon mustard

1 clove garlic


Drain the cashews.  Place those, with all the other ingredients into a wide-mouth jar.  A pint jar will do the trick.  Whip with an immersible blender until everything is smooth. That’s it!


My rollup creation with a healthy dab of cashew dressing to add a creamy-lemony flavor.

Also on my rollup is a dab of some amazing mushroom rice concoction, sprouts, and jalapeño slices.  The salad dressing kind of glues everything in place.  The flavors are amazing together.

One collard leaf split down the middle with the stem removed makes two rollups.  A lovely light lunch, alliteratively speaking.
