“Be a good person, but don’t waste time to prove it.”

Well, of course, if there is no bulgar wheat in this recipe, it really isn’t authentic tabouli.  And if there is bulgar wheat in this recipe it isn’t gluten free.  Do I have better things to worry about?  Why not just get on with the recipe.


1⁄2 head cauliflower florets

2 cups diced tomato

2 cups diced cucumber

juice of one lemon

1 t cumin

parsley, small bunch


In a food processor, pulse the cauliflower, cumin, and parsley together until the mixture has a rice-like consistency.


Mix the rest of the ingredients together in another bowl.  Combine the two creations.


OMGoodness!  Bright colors and happy dance!

This dish is amazing served with hummus and some roasted veggies on the side.  A combination of roasted potatoes, asparagus and onions comes to mind.  I think that would work.

One other note –  This recipe makes a lot!  I would probably make a half recipe next time. My husband is not a fan of tabouli with or without bulgar wheat.  I’ve got a lot of eating to do!
