One of my new favorite documentaries, which also led to a new favorite recipe, is “Un-supersize Me”.  It’s about a young woman who lost 200 pounds in one year.  Yes, she had a coach and medical support and a can-do attitude that lit up a room.

She also shared recipes!  One of my favorite is for a pick-me-up snack that’s easy and yummy.  It’s banana slices stacked with almond butter.  Amazing energy, good fat, and delicious.


Of course, we don’t need to spell this out in a recipe.  Yes, you could also use peanut butter or any other nut butter that tickles your fancy.  The sweetness of the banana satisfies that craving for sugar and the fat in the nut butter keeps you feeling full for longer than a carbs snack would.

Also, your brain needs fat to function.  Might that explain why so many “interesting” people went into politics following the low fat craze?  Just asking.
