“The secret ingredient is always coconut oil.”
Seems the world is going crazy for coconut oil. My granddaughter uses it to cleanse off her makeup. It’s supposed to be a great hair conditioner. Great for sautéing and salad dressings.
However, the following recipe uses flaked coconut. Where is this going? Beats me. I’ve been off of coffee for 4 days now and am using that as an excuse for my lack of logical thinking. Thinking aside, I think you’re going to love the following recipe.
2 large carrots, coarsely grated
1 1/2 T sesame seeds
2 T goji berries, softened in hot water and drained, or raisins work just as well
6 T coconut flakes
S&P to taste
coriander, just a dash, optional
1 t olive
juice of one lime
Soak the goji berries for about a half hour in hot water. Go about your business with the rest of the salad while this happens.
Grate the carrots into a large mixing bowl. Sprinkle in the S&P and mix or massage well. Drain the goji berries and add along with the other remaining ingredients.
Mix the olive or coconut oil together with the lime juice and drizzle it over your creation.
Taste and decide on the coriander. Adjust the S&P.
I like this salad served chilled. It’s a great part of a salad trio plate. My other favorites would be Faux Potato Salad and Tomatoes with Olives. Summer is such a happy salad time!
